World Butchers’ Challenge Postponed to August 13-14, 2021

Similar to many other large scale events this year, due to the pandemic a decision was made to postpone the 2020 World Butchers’ Challenge to August 13-14, 2021.
It has been a year unlike any others for all of us. I appreciate all the support that I have received for this lifetime opportunity and achievement. Please rest assured the funds will still be dedicated to this event in 2021 and we will resume fundraising again in the next while and our Canada Team will proudly represent and present.
At this time we understand that all of us are navigating our businesses, work and sending our kids to school in these changing times. We will get through this together. Onward!
Covid-19 Affecting Meat Prices
Leave a CommentThere has been so much change lately with Covid-19 and business responses to Covid are affecting everyone. You may have heard recently that Cargill temporarily has shut down the Quebec meat packing plant, the second shutdown in Canada due to coronavirus.
While Herrington’s does not source meat from Cargill, the prices of meat are definitely going up everywhere, beyond our control.
Some of the reasons for increase in pricing are as follows:
- Outbreaks of Covid-19 are either either forcing closings or slowdowns at meat processing plants across the country.
- The response to Covid-19 is requiring changing plant processes to adapt plants to prevent the spread by facilitating physical distancing.
- Additional costs also include providing personal protective equipment for all workers: gloves, masks, and visors for example.
For these reasons, production at meat processing plants has slowed and costs have risen.
All these workers, as well as Herrington’s staff are doing their best to serve you in the circumstances. We’ll get through this together.
Training with Team Canada, in Calgary, for World Butchers’ Challenge
Leave a CommentBrent had the pleasure of training this month with the rest of the Team Canada members at the Canadian Beef Centre of Excellence – Canada Beef. They are continuing their training for the 2020 World Butchers’ Challenge.
All this training definitely strengthens Team Canada, but also continues to hone the skills of Brent Herrington for the benefit of our local customers too.

Herrington’s – 2019 Mayor’s Honour Roll Recipient
Leave a CommentThe new year 2020 started off great for Herrington’s. On January 5th Brent Herrington was presented with a Certificate of Congratulations, as a 2019 Mayor’s Honour Roll Recipient for volunteer contributions and making a difference in our community over the last 20 years.
Some of the contribution highlights included:
- “For Goodness Steak” fundraiser for Port Perry Hospital Foundation with donations just under $15,000 over 2 years.
- Supporting many community activities:
- Blackstock Minor Hockey
- Port Perry Angels
- Amazing Race Port Perry
- many Port Perry Churches,
- House Tours
- Dinners, etc.
- For the past 15 years, donating the burgers for every participant for the Terry Fox Run.
- Winning the prestigious award of Ontario’s Finest Butcher to help put Port Perry on the map, and
- To now be competing on Team Canada at the 2020 World Butchers’ Challenge.
Brent would like to express his thanks to his family, and staff and wonderful customers for contributing to this achievement and for all the continued support as he continues to train and compete for Canada at the 2020 World Butchers’ Challenge.

Mark your calendar for the World Butchers’ Challenge which will take place in Sacramento on September 5th, 2020, with our very own Brent Herrington as a Team Canada member/competitor.
Meet all 16 Teams featuring 96 competing worlds best butchers. The Worlds’ Butchers’ Battle takes place in the Land of the Kings to see who will reign and bring the title home.

Ontario’s Finest Butcher Competition – 2019

The Ontario’s Finest Butcher competition is hosted by Meat and Poultry Ontario. “This competition is all about paying homage to the butcher, a culinary star that is often forgotten,” says Franco Naccarato, MPO executive director.
This competition began 6 years ago to showcase and the skill in butchers shops and meat processing in Ontario. The competition is also used to promote this skilled profession which has a labour-shortage.
The theme for the 2019 competition held October 26-27, was “Outdoor Cooking”.
Don the Official Champion’s Black Jacket!
Our very own Brent Herrington, with 30 years of meat cutting mastery, outperformed his 2 competitors and won! Similar to the Masters Golf Tournament where the green jacket is the presented to the winner, Brent donned Ontario’s Finest Butcher Competition’s official champion’s black jacket. He also took home a prize package valued over $3,000 including a Minimax Big Green Egg™ , YETI Tundra cooler and Traeger smoker.

“I’m ecstatic to win the title. Putting our trade in the spotlight will help us all find more qualified people,” says Herrington. “I hope butchers continue to try out, meet new people, and stretch the boundaries of their skill.”
Onward and Upward
Brent will continue performing and testing his skills as he will be joining Team Canada in the World Butchers’ Challenge in Sacramento in September of 2020.

Brent Herrington – Ontario’s Finest Butcher!

You heard it here first.
Our very own Brent Herrington qualified for the finals of Ontario’s Finest Butcher competition.The elimination round was held in September, with ten competitors from across the province given 30 minutes to transform a fresh pork bone-in leg, bone-in butt, and bone-in loin, into display ready cuts.
The competitors were judged on the degree of difficulty, and their skill/efficiency level in boning, trimming and cutting, primal cut utilization and financial performance.
It was a great display in the elimination round, as the video below portrays, and Brent made it to the top 3 finalists.
The finals were held this past weekend, October 26-27 in Niagara Falls and he WON!!
Brent was up against some fierce competition facing off in the final round against Doug Easterbrook of Townsend Butchers and Steve Toms of Fortinos. All finalists were given 30 minutes to prepare 2 chickens, a leg of lamb and a beef rib to prepare beautiful merchandisable items that would be judged.
The judges scores combined with attendee’s votes determined that Brent was the winner!!
The award was presented at The Academy Awards of the Ontario Meat Industry – MPO Red Carpet Awards Gala 2019! Download the MPO Gala Press Release (pdf).
This was the sixth year of this annual competition.

A GoFundMe campaign has been set-up to help the Canadian Team as they prepare to compete at the World’s Butcher’s Challenge 2020. Alternatively, available for purchase are short sleeve or long sleeve T-shirts for $30 which supports the team and also shows your support.
For this competition, competitors must travel across Canada to practice together, not to mention the expense of travel to California. This fundraising campaign will help with the travel expenses.
Funds raised from this campaign will also help defer other associated costs such as uniforms, props, and ‘practice’ proteins.

Team Canada – World Butcher Challenge

For the first time ever, Canada will be entering a team into the World Butchers’ Challenge taking place in Sacramento, California, September 5, 2020 and our very own Brent Herrington made this prestigious team.
The World Butchers’ Challenge 2020 competition is conducted over three hours and 15 minutes with competing teams given a side of beef, side of pork, whole lamb and five chickens which they must then transform into a themed display of value-added products. “Teams can provide their own seasonings, spices, marinades and garnish to finish products that are designed to inspire and push the boundaries, yet which are also cookable and would sell in a retail setting. Independent judges score each team based on technique and skill, workmanship, product innovation, overall finish and presentation.”

For Goodness Steak, You/We Did it Again!

Thank you to all who supported our for Goodness Steak Fundraiser. Because of you, we are very proud to to have given $7400.00 to the Port Perry Hospital Foundation, surpassing our donation of last year.
We’re happy to report that 370 boxes of delicious steaks were purchased and enjoyed by you our customers, friends and Foundation supporters throughout the Township of Scugog!
The funds raised will support the delivery of quality care close to home at our very own Port Perry Hospital.
